Grapes : 100% Rolle

Winemaking : Manual harvest in 35 kg small boxes, destemming then cooling of the grapes to 8°C, cold skin maceration for 6 hours, cold pressing and settling, fermentation at a constant temperature then placed in 400L barrels at around half fermentation.
Ageing: Aged on lees in 400L barrels for 6 months with stirring twice a week

Tasting notes : Golden colour with silver hints.

Nose of citrus fruits, white flowers and fine woody notes (spices);

The palate has a good length, a well-rounded rich body which reveals fine notes of citrus fruit and  maturing.

Advice :
We advise you to drink this wine at a temperature of 6-8°C.

Pairing :
Carpaccio of sea bream on a bed of citrus fruits, grilled lobster.
